About Tom

As a Managing Director, and Operations Director of several highly successful restaurant businesses, I bring real-world hospitality leadership with the tools of a personal performance coach.

 

I’ve spent more than 25 years in hospitality, leading teams, opening and growing sites, improving standards, and navigating the moments that stretch leaders most — growth, change, restructuring, and stepping into a bigger leadership identity.

I was (very proudly!) the first Operations Manager at LEON when we had just four sites, helping shape a mission-driven healthy fast-food brand.

​

After five years at LEON and growing to 11 sites I decided to build something of my own. As Founder of Blackfoot I created my own brand, raised capital, developed the menu, ran and ultimately closed my own business.

​

I later joined Street Feast as Head of Operations, where we turned forgotten and derelict spaces across London into vibrant street-food markets. These venues became launchpads for a new generation of chefs and food entrepreneurs, many of whom have since gone on to build successful restaurants of their own.

​

In 2018 I joined BAO, a young and hugely respected restaurant business within the JKS Restaurants group. Over the next eight years, as Operations Director and then Managing Director, I led the business through its phase of growth, expanding from two restaurants to seven and helping shape BAO into one of London’s most loved hospitality brands (according to Time Out!). Throughout that journey, our focus was on scaling the business commercially whilst always protecting the creative heartbeat, culture and quality that made the brand so special.

 

Alongside my role at BAO, I also became Operations Director at JKS Restaurants, leading the Fine Casual Brands — a group of Michelin-recognised Bib Gourmand restaurants — working with high-performing teams to deliver exceptional guest experiences at scale.

Why Coaching?

Alongside my industry experience, I wanted to gain the tools and competencies of a professional coach so I could truly help people unlock their potential. Between 2023 and 2025, I trained as a Personal Performance Coach and Neuro Linguistic Practitioner, developing the mindset, skills, and techniques behind powerful coaching: listening deeply, asking the right questions, holding space, and helping people recognise the potential they often can't see in themselves.

Why I do it...

I do this because hospitality is full of brilliant people who give everything to their work - often at the cost of their own wellbeing. I've lived that life, felt the pressure, and seen the toll it can take. Coaching is my way of supporting the industry I love: helping leaders build healthier ways of working, make better decisions, and create careers that last. Coaching creates that space, not just to solve problems, but to strengthen how you lead.
